Do you have a shop?

We've been growing our business for the past 12 months or so. At present we operate out of our homes under the Texas Cottage Food law. Or goal is to have a shop in the next two years.

We currently sell at Dallas-area farmers markets. We can also take orders via our webform for pickup or home delivery.

What is the Texas Cottage Food law?

Accepted Answer

The Texas Cottage Food Law allows individuals to sell certain foods made in home kitchens without requiring a food manufacturers' license or  a commercial kitchen, and are not subject to inspection by State or local health departments. Under the law we are allowed to make and sell pre-packaged baked goods that are not temperature dependent—foods that are safe at room temperature and thus do not require heating or refrigeration.

Are your cupcakes vegan? Gluten-free? Sugar-free?

Accepted Answer

Sugar-free and gluten-free bring challenges that standard cupcakes do not face. Nothing melts like sugar, and gluten-free flour tends to be dry, resulting in a mealy mouth-feel. Chicken eggs act as a leavening ingredient, creating structure and stability to cakes, thicken and emulsify curds and custards,  add moisture, and are a general binder. Butter provides richness, structure, and tenderness, and is essential in buttercreams, curds, and custards. We have a few ideas that are currently in R&D.
